Stardust your words 'I'm still here' say it all. The encouragement and inspiration here helps everyone. I was away from my scale the last 2 weeks and managed to lose .8 pounds. Sounds like Jablea and Rihannsu have done really well along with others. Nica, thanks for the 'Happy Weight' calculator link. I'm going to go check it out now.

Wednesday - Check in Day
nica, that Happy Weight site is interesting and probably much more realistic for most of us than most things out there. I'd be thrilled. I checked out my younger self too.
scotia and stardust, don't be down in the dumps, we just have to find a way to kick us into gear again. My loss last week was like short term fat that hadn't settled in yet so still easy to get rid of. It was probably all just in my gut but I needed to do something or I'd set a higher plateau again instead of where I am.
I'm going to add to my goals again even though that water one is really tough.
Water - including my vitamin water that I add a scoop of MSM to Less lunches on my subbing days More consistent daily supplements Pre-prepare snacks for when I come home
I'm really bad when I come home and I'm hungry and tired and the thought of peeling a carrot is ugh. Anyone have advice on keeping peeled carrot sticks fresh? I'm not a big fan of the store bought baby peeled carrots, I don't like their taste (they are usually big carrots machine shaped into smaller ones)

I was on vacation last week and not a shrimp went uneaten. LOL. Nothing to report. Got to get back in the swing of walking and exercising, eating right, and adding that water drinking to my habits.

Congratulations Rihannsu and Jablea! I had a bad pigging out kind of week and am up 1 lb. Struggling with getting back on track, which seemed much easier last year! On the plus side, keeping up the walking so far, although work is getting busier so time to walk will become an issue. Also trying to drink more water. I do drink quite a bit, mostly in the form of herbal tea, but not so much water. I do find it easier in spring/summer than in the winter time.
Going to keep working at it!

A day late but ... this week's featured veggie is SWEET POTATOES! Here are some of the health benefits of sweet potatoes: - An unsurpassed source of beta-carotene and Vitamin A. Interestingly enough, the vegetable requires a bit of fat to activate, which can easily be achieved with a spot of butter or olive oil. - Unique antioxidant properties, which help clean the body of heavy metals and free radicals - Helps reduce irritable bowel syndrome or ulcerative colitis - Anti-inflammatory, especially for brain and nerve tissue - Helps with blood clotting - Provides a sweet taste while actually improving blood sugar regulation - Anti bacterial and anti fungal Note: Sweet potatoes are not recommended for people with kidney and gallbladder problems. Recipe - Slow Cooker Sweet Potatoes 1-6 sweet potatoes Wash sweet potatoes but don't dry. Line bottom of the crockpot with a piece of foil and put sweet potatoes in it. Put in 1/4 cup of water (a little more if you are making a lot of sweet potatoes). Cook on low for 3-6 hours (shorter for small sweet potatoes, longer for big ones). This is my favorite way to cook sweet potatoes. Just split and serve with a little butter and seasoning (cinnamon, salt, cloves ... whatever you like). You can eat the skin as well if they are the organically grown types. The sweet potatoes are now ready to be used in other recipes that call for cooked sweet potatoes.

ooo, cool. I didn't know sweet potatoes needed the fat. Maybe that will encourage me to not use so much brown sugar. I do a stove-top version because I only do one at a time as the rest of the family turns up their noses at them. The slow-cooker sounds like a great way to make them into bakers. Looking forward to what other recipes you use them for.
15 Minute Sweet Potato
Peel and cut into chunks/slices Place in soup size pan add 1/4 cup water Cover & Cook for: 5 Mins at Medium, 5 Mins at Low, 5 Mins at Off Serve
