I think that the company buys and sells taxidermy sourced from old museum collections etc. Perhaps also some that have died via accident or natural causes. Their items are real, but the animals are not killed specifically to be stuffed and sold . I don't think that Shosh said that it wasn't real, rather that no animal was killed to create the piece. ETA: at least not in the modern period.
