Today, I am not writing about Adam. But then again, I am writing about Adam. Well, let me explain.
I made a speech last night. The details of the occasion are not of consequence, but let me just say it was an important event. I wrote my speech in advance and was prepared. I had made many speeches before but I was nervous. (I think everyone is nervous when they make a speech, or go on stage.)
A man stood at the podium and introduced the person who was there to introduce me. I looked at my speech – I read the words I had written and already knew. My introduction was being read. I vaguely heard it. My heart was beating, my mind wondered. I looked at the assembled crowd and was certain my speech was too long. It was time for me to speak.
I walked to the podium. Posed for a picture or two. Everyone left the stage and I was alone. I looked at the folder that held my speech. I looked at the crowd. I thought about just saying, “Thank you” and leaving the stage. My heart was beating even faster. Time slowed to a crawl. My heart beat faster Then in the space of a few seconds – comments from this magical place flashed by – lightening fast. Suddenly I had a spark of courage I’ve never felt before. I said to myself – what the f*ck! I am doing this now.
Why was I nervous? Because of a standard marketing speech, my speech was plain but from my heart – a rarity in the marketing world. And a risk for this occasion.
They speech was built on my total life and career experience – but the voice, the tone, the honesty came from here. Not inspired by Adam, but inspired by a few people in RL that I love and inspired by a special group of fans that Adam unwittingly brought together.
I delivered the speech. I focused so much on the message, the words that I didn’t pay much attention to the crowd. Towards the end of my speech, I noticed that everyone was listening to me. The bartender had no one to serve. The buffet was empty. I finished my speech and got some applause. Posed for a couple more photos and left the stage. (Time to head to the bar – stat!)
Drink in hand, I was armed to face anything. And what I faced was requests for copies of the speech. That was a first! (Thankfully, my video studio crew was there, so there are recordings and video of the entire thing.) I heard that people who arrived late were told that it was too bad they missed “the speech”. Ha!
So, just a word of thanks to all of you for letting me babble on about how I felt, for sharing your opinions and feelings, because I mean it you inspire me to be more open and free. And that is a good thing.
This recipe was “Inspired by Adam”[/size][/b]
Fish Tacos
Tacos:
• 1 pound white flaky fish, such as mahi mahi, cod or haddack
• 1/4 cup canola oil
• 1 lime, juiced
• 1 tablespoons ancho chili powder
• 1 jalapeno, coarsely chopped
• 1/4 cup chopped fresh cilantro leaves
• 8 flour tortillas
Garnish:
• Shredded white cabbage
• Hot sauce
• Crema or sour cream
• Thinly sliced red onion
• Thinly sliced green onion
• Chopped cilantro leaves
• Tomato Salsa, recipe follows
Directions
Preheat grill to medium-high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.
Remove the fish from the marinade place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork.
Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes.
Tomato Salsa
• 2 tablespoon peanut oil
• 1 small red onion, coarsely chopped
• 4 cloves garlic, coarsely chopped
• 4 large ripe tomatoes, chopped
• 1 serrano chile
• 1 jalapeno, sliced
• 1 tablespoon chipotle hot sauce
• 1 tablespoon Mexican oregano
• 1/4 cup chopped fresh cilantro leaves
• Salt and pepper
Preheat grill or use side burners of the grill. Heat oil in medium saucepan, add onions and garlic and cook until soft. Add tomatoes, serrano and jalapeno and cook until tomatoes are soft, about 15 to 20 minutes. Puree the mixture with a hand-held immersion blender or blender until smooth and cook for an additional 10 to 15 minutes. Add the hot sauce, oregano, cilantro and lime juice and season with salt and pepper, to taste.
Yield: 6 to 8 servings
Q3 note: Adam apparently likes his fish burros with Coronas but I recommend Negra Modelo, more substantial 5.3% Vienna lager-style beer, often served by the dozen in a bucket of ice in Mexico. Always include lots of lime slices. Cheers!
