Nah, I don't think he will. I've been a strict vegetarian for forever (from before it became fashionable 😄) and even I have kept my leather clothes. I have even bought some new on occasion where it was too hard to do otherwise (shoes! it is close to impossible to find nice shoes without leather), but even then I tried to buy second hand.
Adam is not going to be strict about being a vegan, I guess, and he tells the interviewer he does it for health reasons. So I think we can rest assured that we are going to get some more tight leather pants in the future.
Also, not going to preach here, but the amount of resources needed to 'produce' meet is indeed shockingly high. So if I can help people with good vegan / vegetarian recipes, please DM, I'd be happy to get you some.

To be a true vegan is really difficult -- and some people who avoid leather, end up buying products that are not vegan - plastic shopping bags, car and bike tires, cane sugar is filtered through bone char (some people still consider it vegan), and many more.
And many wines are made with animal products [They are clarified with fining agents -- casein (a milk protein), albumin (egg whites), gelatin (animal protein) and isinglass (fish bladder protein). These fining agents are known as processing aids. They are not additives to the wine, as they are precipitated out along with the haze molecules. Vegan wine exists - usually filtered with clay.]
I like leather and wool, and cheese is too good not to eat. And I drink wine that is not vegan or even vegetarian.
I have a close friend who is a Jain and a strict vegan -- plus many other restrictions like not honey, no mushrooms, onions, etc. He will not he yogurt or vinegar or yeast bread etc. etc. The list is very long. I have great admiration for the conscience-based low impact diet but I am not sure I could do it for my whole life.
For me, I think it is great to see so many people trying to eat less meat / use less animal products. A little light in an otherwise very complicated and sometimes sad world.
