Lawdy it's Wednesday again - Check in Day
I have no idea how I'm doing this week. I think the train left the station without me somehow but I've been busy and since it's my idle hands that get me into trouble then maybe being busy will have helped. With luck I'll remember to weigh in the morning before breakfast.

Hi, everyone, it's been a cold week with a lot of bad weather, closings, etc. I only made it aerobics once. If history holds true, though, this may be the last arctic cold front of the year to make it this far south.
But I have good news to report. I began the two mile distance in my Texercise program and found that my earlier work has paid off and I can essentially "skip a grade"! I find that I can walk the two miles in 36 minutes, which puts me at milestone 8 of 12 in the fitness walking program. Yay!! I am going to concentrate on getting used to the new distance for another week or two before setting a new goal.
In honor of the Olympics, I'm going to share my simple and tried-and-true recipe for borsch, which I'm going to make tonight. If you have a food processor, use it to shred the beets, otherwise it's a hassle. This is a really yummy vegetable soup. Makes about 4-6 servings; I usually cut it in half.
Continental Borsch
2 1/2 cups of shredded beets 1 cup chopped carrots 1 medium onion, chopped 3 cups water 2 tsp. salt 1/8 tsp. pepper
2 cups beef broth 1 cup shredded cabbage 1 Tb. butter 1 Tb. lemon juice
In a kettle, cook beets, carrots, onion, water, salt, and pepper until vegetables are tender, about 20 minutes. Add beef broth and cabbage and cook uncovered for about 15 minutes. Stir in butter and lemon juice and serve. You can add a bit of sour cream for a garnish if desired.

Yay! Back down .8 today. Ironically getting started walking again bumped me up a bit this last week but headed back down now. Not unusual at all though because exercise stresses your muscles and the body retains more water to process.

chapf ....busy gal.....keeping us entertained with your smilie cartoons! Well your fingers and brain are getting lots of exercise!! SAME WEIGHT.....I am not exercising as I should. Where is my initiative??? I need more than walking a dog in this weather. It is more like once around the block or park, and then weight lifting 9 lbs...haha. I walk my niece's puppy most days and she gets so cold, I pick her up and carry her the last stretch. Even trying to warm her paws in my hands only lasts so long. -15 yesterday but a bitter wind. So I play inside with her by throwing her toys. The problem is she runs, and I do nothing. Well out for dinner tonight, company for overnight, then back into a regular routine tomorrow. I should get on the treadmill or bike while watching the Olympics in the morning.

Stampgal, totally get what you are saying about the weather. It's hard to get motivated to move. Spring has to come eventually! Right???
Well this is sorta a two week check in for me. This week I started getting better about working out, but really have not been good about eating. In two weeks of mostly up, I managed to get it back down to a pound loss. After being so successful last month it was a real eye opener to see how those occasional free for alls can make the daily cutting back mean nothing. I have to work on a scaled back approach for those times I am not 100% motivated and at risk of sabotaging everything. Guess it is a learning experience. Onward and upward.
I have added a new goal which I think is important for those limiting their diets either by dieting or not eating meat--remember to take vitamins/minerals!

Hi everyone! Back from holidays where we did lots of walking (and eating) but got sick the day after we returned home. Up 1.8 lbs. from my last weigh in 2 weeks ago, so not too bad. Because I've been sick have not done any walking at all since we got home and will be going away next week again for a meeting and family visit which will again eliminate much if not all of my walking. Hopefully I'll feel up to getting back to it later this week.
This Friday, being my 60th, is my original goal date to lose 60 lbs. I've got 11 lbs. to go as of today, so in one way I'm disappointed, but in another I've finally lost quite a lot of weight after trying for many years without any success, so giving myself a pat on the back! Having a hard time right now to get back on track for those last 11 lbs. so it will probably be after I get back from my family visit that I'll knuckle down again seriously. I'm sure if I can do it, you can all do it too! Have a great week and I'll be back in 2 weeks again!
