Come to Allentown PA. Seriously - the best cheesesteaks at The Brass Rail. Better than Philly.
adamrocks - Very thinly chipped steak covered in red sauce with melted cheese & hot peppers.
Regional differences: RED SAUCE? Not sure hat that is, and all the Brass Rails in Pgh, where I grew up and still visit, are gone, but other than that, your recipe sounds right, EXCEPT, Cheese should be Provolone (ha) and along with peppers, hot or not, the steak and cheese should be smothered in Onions, Green Peppers, and (if you choose, which I do,) Mushrooms. I've been to the 2 places in Philly who fight over whose is the best, one's called Patrick's, I think, but don't quote me, and to be honest, it's good but no better than those I've had lots of other places. AND, as far as Adam eating one, can't see it if for no other reason than 1000s of calories and fat grams and carbs. BUT, that being said, it's worth every bad thing that comes along with the yumminess.

Thanks for all the different ways to make the Philly Cheese Steak. They all sound good to me! The next time I'm out I will definitely order one.

The details of that rider are HILARIOUS. Especially since, as fans who follow all things adam, we know that half of that shit is completely untrue! Where did that come from? Maybe he is just generous to his crew It actually looks like a pretty modest catering list to me. The only surprising item is "Philadelphia Cheese Steak" -- I can't find a decent cheese steak in most of the US forget about Russia. This is something that is negotiated by an artist's management and the promoter. What is odd, it the article makes it look like Adam is going to personally drink 14 liters of milk. ** Setting aside this list -- I imagine some vodka will be consumed on this leg of the mini-tour. Try finding a wet Italian beef sandwich or a really decent meatball sub outside of Chicago......I don't even want to talk about the last time I had a decent matzah.

Wars have been fought about where to find the best Philly cheesesteak -- but there is no doubt where it was invented -- in South Philadelphia in the 1930's -- and what it is. Must be frizzled steak (frozen, sliced very, very thin and grill-fried) with onion and cheese on a long Italian roll. The cheese was added later and was provolone. All other additions -- mushrooms, peppers, tomato sauce and mozzarella (pizziola), and the chicken Philly are later innovations. I prefer the pure original with provolone cheese and onions. The worst thing are "gourmet" fancy restaurant versions that attempt to use real steak. They are always too chewy and do not have the succulent, melt in the mouth deliciousness of a real cheesesteak. I am sure they are much lower fat but a low-fat cheesesteak makes no sense. Google tells me no.
