With the farm boxes here on hiatus, I admit I have not done a whole lot with healthy eating. I've been going for convenience, especially while watching the Olympics. I did make a kale recipe that was a hit and I'll share it and my notes on it.
Good news on the walking front though! The weather has gotten really nice here and I've been walking. Going up to two miles from 1.5 hasn't been as bad as I thought it would be. I am moving on to milestone 9 of 12 in the Texercise fitness walking program. My new goal is to walk it in 35 minutes.
Sweet and Savory Kale
olive oil
1 small onion, diced
2 cloves garlic, minced
1 Tbp. Dijon mustard
4 tsp. sugar
1 Tbp. cider vinegar
1 1/2 cups of chicken broth
4 cups of kale, rinsed, stemmed and torn
1/4 cup dried cranberries
salt and pepper to taste
1/4 cup sliced almonds
Heat olive oil in a large pot and then cook the onions and garlic until softened, about 5 minutes. Stir in mustard, sugar, vinegar, and chicken broth and heat to boiling. Stir in kale, cover, and cook five minutes until wilted.
Stir in the cranberries and continue boiling uncovered until liquid is reduced by about 1/2, about 15 minutes. Season with salt and pepper and sprinkle with the almonds before serving.
Notes: I used one decent-sized head of kale and it reduced so much that it only made enough for two modest servings. So be sure to use enough kale. I had to add more chicken broth during the cooking because it reduced so rapidly. I only used about half the sugar, and I didn't have the craisins so I used raisins and they were good in the recipe. I didn't have the almonds but didn't miss them.
I find that I always have to adjust the onion in recipes because I like to use Texas onions and they are gigantic. So adjust the amount of onion for the size in your area and what kind of onion you like to use.
