Yay, stardust! I exercised every day this week! Either walked, went swimming, or did yoga. I am going to do yoga this summer and leave off with the aerobics. I just need a break from the boredom there ... if only they used better music ... hmmmm. New farm basket this week! Our vegetable of the week is GREEN ONIONS!!!!! Also known as scallions or spring onions, these mild yet flavorful little onions enhance almost any savory dish. When larger, the bulbs can be used in any onion recipe, and the tops may be used in place of herbs like chives. In either case, they add a burst of nutrition as follows: - Off the charts on Vitamin K, which is crucial for bone density - A good source of Vitamin C and A - Rich in compounds that boost the immune system and help inhibit cancer Ideas for using green onions: - Use them in any salad or coleslaw - Use them in salsa - Use in any soup - Sprinkle on any pasta dish - Bake into a quiche or just scramble with some eggs - Bake into cornbread or biscuits - Put them on sandwiches - Put them in sloppy joes or meatballs - Put them in couscous or rice dishes

Way to go Stardust!! Excellent news!
I'm down 1 lb. from 2 weeks ago when I last weighed myself. At least I'm back on track after that week of pigging out. Keeping up the walking so far and got in one set of exercises and was fairly mobile all around. Looking forward to when we start having fresh strawberries/raspberries/lettuce out of our own garden. Keep it up everyone!

I'm up again about half a pound but have been way over eating and not walking so totally expected. Of course I should really buckle down for the rest of this month since I'm sure July is going to be crazy with all my traveling. Fully expecting to put at least ten pounds back on in July. LOL

I don't think anything has changed. My biggest accomplishment is taking some new medicine that made my knee swelling go down and all of a sudden it seems almost back to normal and I'm not even having to take pain meds. Doing some physical therapy with it still to get all the right muscles/ligaments strong again. It was to the point I bought a used wheelchair to take to QAL. Yeah, I think I'll be able to leave it home. Since I haven't been able to walk when it was swollen then my major exercise was weeding the garden.
Had another sweet potato in the crock pot today. It does really keep them sweeter than my other method. Eating salads from my lettuce garden. Carrot tops are tangy.

I lost 1 pound this week. I had a Dr. appt. and she said not to worry so much about the pounds, (had lost 10 pounds since last appt.) but rather feeling good. I have had increased numbness, tingling, burning etc. from my spinal problems. So this week I started getting up out of this computer chair and walking around every 30 minutes. Hopefully, this will help burn more calories plus keep me from sitting in one place for too long which is bad for me.

I get planted in the chair and have trouble getting myself out of it!! Especially dangerous when you live alone.

Hi, everyone! jablea, I'm glad your knee is doing better and that you like the crockpot sweet potatoes. So easy. So are we going to try to keep up the group during Queenbert? I did pretty well on exercise this week. I walked, went swimming, or did yoga six out of the seven days. Yoga is hard, man. Right now this exercise combination is working for me. I still feel a little bad that I did not make on my "Texercise" routine -- I got so worn out. I try to keep in mind that the best exercise is what you can actually do. Love to eat that organic farm produce! Our veggie of the week is a fruit ... PEACHES!!!!! My area of the country has famous peach orchards (Fredericksburg peaches) and the last few years the peach crop failed because of the drought. This year we have peaches!!! Only a few weeks to take advantage of these delicious fresh fruits. Peaches go soft quickly so if you can't eat all your peaches at once you can peel them, cut them up, and freeze them for later. Here are some of the health benefits of peaches: - Very high in antioxidants - Great source of Vitamin C - Great source of beta carotene which boosts eye health - Rich in potassium which boosts the kidneys and liver and protects against ulcers - Wonderfully sweet but does not raise blood sugar or insulin levels - High in Vitamin K and iron which is good for the heart and blood Recipe: Most Excellent Banana and Peach Smoothie 1/4 cup peach nectar 1/4 cup orange juice (you can change up the juices however you want) 1 tablespoon honey 2 frozen, cutup bananas 1 peeled and cutup peach 1 cup vanilla yogurt 1 cup crushed ice Blend and enjoy!

Stayed the same this week but I want to share some before and after pictures. I had forgotten that my bosses had me take a picture to put up on the business website when they first set it up. Recently a new customer mentioned that I looked like a different person from my picture. Looking at it I would have to agree. So yesterday I got a customer to take pictures of me with her dog. Different customer because unfortunately the Bichon in the picture above has passed away. Here is the new picture.
