Thursday - Brain Food: Black Bean & Salmon TostadasMade these for dinner tonight. Black Bean and Salmon TostadasFour servings, two tostadas each NUTRITION PROFILEDiabetes appropriate, low calorie, low cholesterol, low saturated fat, low sodium, healthy weight, heart healthy, high fiber, high potassium, and gluten free INGREDIENTS- Eight six-inch corn tortillas
- Canola oil cooking spray
- One six- to seven-ounce can of boneless, skinless wild Alaskan salmon, drained (or fresh salmon)
- One diced avocado
- Two tablespoons minced pickled jalapeños, plus two tablespoons pickling juice from the jar, divided
- Two cups coleslaw mix (see tip) or shredded cabbage
- Two tablespoons of chopped cilantro
- One 15-ounce can black beans, rinsed
- Three tablespoons reduced-fat sour cream
- Two tablespoons prepared salsa
- Two chopped scallions
- Lime wedges (optional)
PREPARATION- Position racks in upper and lower thirds of the oven; preheat to 375°F.
- Coat tortillas on both sides with cooking spray.
- Place on two baking sheets. Bake—turning once, until light brown—12 to 14 minutes.
- Combine salmon, avocado and jalapeños in a bowl.
- Combine cabbage, cilantro and the pickling juice in another bowl.
- Process black beans, sour cream, salsa and scallions in a food processor until smooth.
- Transfer to a microwave-safe bowl.
- Cover and microwave on high until hot, about two minutes.
- To assemble tostadas, spread each tortilla with some bean mixture and some salmon mixture and top with the cabbage salad.
- Serve with lime wedges, if desired.

well I really have no excuse for reporting a total lack of progress, but here goes...we've had a few big snowstorms lately and flowergirl's evil twin did the grocery shopping before each storm, and brought home tons of stuff that, um, wasn't kale. and then ate them all. I hear ya girl . . . . . those evil twins are always hanging round the corner just waiting to sabotage the best intentions . . . . the good news is we can start afresh, move on, fight the demons YaY !!

Friday - High Stepping Puppet
Yes, I made it up but it really does work out my legs and rear. Pretend your right hand is attached by string to your right knee and the same on the left side. Walk around the house lifting your hands (which pulls up your knee by the invisible cord)
Now pretend the cords got tangled up behind your back and your hands now pull up your feet up towards your rear. Walk around the house again.

Saturday - Arm Circles
Get the blood moving, energy flowing. Forward arm circles as big as you can make them for 30 seconds and then the same backwards.
I've been doing better with food the last couple of days and we didn't go out to a Friday dinner like normal. Maybe I can hang on to a weight loss thru next week this way and keep the evil twin away.

Sunday - MSMOne year we had a discussion on Gloucosomine, many of us felt it helped despite studies that say no difference. Well I've found the main ingredient that is often added to those pills and which may be the real deal. Despite going thru 2 months of therapy last year for my knee the pain really didn't go away until I started taking a teaspoon of this. My hips were also killing me which I really need to check out I suppose, but this took care of that pain also. When my hip pain comes back then I know I haven't had my MSM in a couple of days. The hardest part is finding something to drink or eat it with as it has a bitter taste. Chocolate Milk is the answer which probably works for everyone. I have a daily vitamin mix drink that I usually use and it's not too bad in Tang. I get mine from Bend Again, lesantenutrition.com/2011/04/bend-again-msm-bulk-flakes-16-oz/ . They attend home and garden shows around here. If you are taking Gloucosmine or a combo like Move Free, make sure it has MSM added. That helps. I take the flakes because in one teaspoon I get 5000 mgs of MSM, the pills might only have 500.
