Yay, down from last week but boo still up from the week before and from my lowest weight. Part of that is lack of consistency in my exercising and part just eating a little closer to maintenance level.

rihannsu, I am extremely impressed with your results and dedication and the information you presented about tracking.
chapf -- welcome back!!!
I had a pretty good week. I either walked or did aerobics every single day, and considering it was a holiday weekend I did OK on my healthy eating. For those who have tried kale and didn't like it -- or spinach for that matter -- I really want to urge you to try swiss chard. I had been making it in a casserole, but now that it's hot I have had it in salad, raw, and it is really good, and supposed to be as full of nutrients as kale. Give it a whirl.
I've eaten almost everything from my veggie box and ready for a new one tomorrow. I made zucchini twice, once in a salad with tomatoes (made enough for two meals) and also some bread which is so good. Had some cabbage and made some fresh coleslaw too with carrots and red onions. I would love it if anyone had any ideas for beets. In the winter I was making borscht which everyone loved. But now it's hot and I haven't hit on anything anybody likes. I made salad last night with the last of the chard, topped with some cold cooked chopped beets, but the beets didn't get eaten.
A final note was that I got some small red potatoes in my farm basket and they sure did taste better than the ones from the store. I baked them very simply with some olive oil and some steak seasoning on them. The other thing is that especially since it got hot, the veggies don't last as long as the ones from the store -- I guess because they aren't sprayed or grown with some kind of preservative.

Happy to say that I am down 1.2 lbs this week, but is too confusing to do this twice a week. So, I think I will report on Fridays when I weigh in at WW. Hope that is okay.
Junie, you are so lucky to get your veggie box. I wish I could find one near me. Cooked beets are good in salads, too. Or if you like pickled beets, that is easy to make and last longer.

Been running around all day, so finally time to check in for the week. Down 1.4 lbs. I'm feeling a difference in my clothes and even DH made a comment a few days ago that you could notice a change! Considering he's usually not that observant, I'll take it!
Had 3 walks last week and ankle was doing pretty good, and then on Saturday, in the middle of the day, it started hurting again, and quite a bit. Soooo frustrating, so I haven't walked since. Have also done a few exercises with a couple of 2 lb. weights to try and tone up a bit a couple of times, so trying to keep that going. Was at physio today and now it appears I'm heading towards a frozen shoulder if I don't keep excercising that! Oh joy!
You're doing so great on the veggie eating Juniemoon, that's awesome, and Stardust, way to go! I'm glad to WW is helping you. See you all next week!

Saturday - Beets
sheesh, this week got away from me. Some ideas for beets for juniemoon:
I've cooked beets in a makeshift solar oven. Cover the inside of a cardboard box with tin foil, paint a glass canning jar black on the outside (I think I used paint that you can use to refinish a grill). Peel and trim beet ends, place in jar with lid on, place in box, wait...wait, turn box to face sun, wait...wait. But eventually when you test the beets with a fork they are soft.
I liked mine just for snacks. They were sweet and I've got to grow more.
Can't use all your cooked beets up? Freeze them. I had some I did in my machine that sucks the air out two years ago. This year cleaning out the freezer and threw them into my Banana bread mix instead of the zucchini or squash I usually use. Turned out great, made the crust a bright red.

Did over 10,000 steps at Universal today. Theme parking involves LOTS of walking so it is kind of the best of both worlds, great exercise and loads of fun. I've discovered that being a single has its advantages in that most of the rides now have a line split for single riders and since most groups want to stick together there really aren't that many singles which means that the line is often faster even than the express line. I don't think I waited more than 5 minutes if that for any of the rides with single rider lines. Oh and the Rockit rollercoaster in Universal is fantastic even though I keep thinking of getting myself something like a kickboxing head gear for riding these things.

Tuesday - Halfsies
Order the half sandwich, spit a meal with a friend, eat half/take home the other, eat the salad/save the main course, save desert for your mini-meal.
When we were first going out the hubby was very good about splitting meals, then he started feeling like that was being cheap and it's taken a long time to get him back to splitting again.
rihannsu, We took the bus to Universal a couple years back. Lol, they dropped us off a long ways away and we had to walk blocks just to get to the parking structure. The second day we found hotel shuttles or something that at least took us to the stairs.

Thanks for all the beet ideas and the adorable beet gif by chapf! I did get beets again in my farm box this time but they were the small ones which are a lot easier to deal with.
I have done pretty well on healthy eating this week. I've made a couple of big salads with some kind of dark green lettuce-y thing and kale. I also made swiss chard casserole (my favorite thing in the world) and carrot patties which were not as successful. Good concept but too dry -- need to try again. Nice simple fresh potatoes tonight. Lattes continue to be my weakness and tbh I am drinking one right now. LOL.
I have also exercised well and only missed one day; it's hot now and I need to walk either first thing in the morning or after the sun goes down. I walked 5x and went to aerobics once. I would give anything if they played decent music at the aerobics class. May try to find a new class in the fall but sticking with this one for right now. Missed going swimming yet because we've actually gotten rain the last couple of weekends which is extremely welcome.
I don't want to jinx it but my nerve pain seemed to have subsided. Hope that's the last I see of that for a while.
Hope everyone is doing well. I really appreciate you guys and find it fun to check in and see how everyone else is doing. Sometimes it's easy to look at how far short you fall of perfection but we should all give ourselves credit for trying.
